SUMMARY This study was carried out on some berries (raspberry, blackberry, currant and gooseberry) in order to determine the suitability of cultivars for deep freezing and the change in quality of fruits during storage. The fruits were frozen at -40 °C and stored for 9 months at –20 °C. Physical, chemical and textural properties of the thawed samples were investigated three times (in every three months interval) during storage. Consequently, two cultivars of raspberry (Meeker and Willamette) two cultivars of blackberry (Black Satin and Dirkson Thornless), two cultivars of currant (Red Lake and Rovado) and two cultivars of gooseberry (Invicta and Rote Triumph) were suitable for deep freezing. |
