DETERMINATION OF APPLE CULTIVAR TO SUITABLE FOR JUICE |

SUMMARY In Turkey, apple juice is generally produced from the non-marketable size of Golden Delicious and Starking Delicious as well as some local cultivars. This cuases an inconsistency in both the amount and the quality of apple juice from year to year and thus, affect the apple juice industry negatively. This study was carried out to determine the most suitable apple cultivar(s) for juice production from the point of view of juice content as well as juice quality. Golden Sel B, Prima, Skyline Supreme, Yellow Spur, Auwill Spur, Mor Spur, Goldjon, Ed Gould Golden, Amasya, All Red Jonathan and Jonagold were selected as the materials among a series of apples which have been determined as standard cultivars at Atatürk Central Horticultural Research Institute, since 1964 under the “Apple Vareity Trials” project. The selected 11 cultivars were evaluated by determining their soluble solids content, juice content, pH, total acid(as malic acid), fructos, sacharos, glycos for production of suitable apple juice. As a result, Jonagold, All Red Jonathan, Skyline Supreme, Ed Gould Golden, Yellow Spur, Auwill Spur and Goldjon apple cultivars were found to be promising for apple juice. |
